Plants produce anthocyanins as a kind of built-in armor against UV radiation and environmental stress. Some cannabis strains are simply built with higher anthocyanin levels than others, which is why cuts like GDP reliably show up violet. But genetics alone don't flip the switch. As temperatures drop during the grow, chlorophyll fades and anthocyanins get their moment to shine (think fall foliage: the cold doesn't create the color, it reveals it).
